Mmmm dinner – Thai Rice with Pineapple and Prawns

Mmm dinner was noice.

It’s a weight watchers recipe. Points value 3, whatever that means.

Recipe.

1 table spoon of marge
1 medium onion chopped
350g cooked white rice
1 tin of pineapple chunks
1tablespoon of soy sauce
1 red chilli chopped
125g peeled prawns
2 tablespoons of chopped fresh coriander

Method
Melt the marge in a large frying pan
Add the onions and cook until tender, about 2 mins
Add the rice and heat for about 2mins
Add the remaining ingredients and cook until heated through and the prawns are done.

Voila!

Makes enough for 4 it says, so we got loads left for lunch tomorrow!
